 Weeknight Dinner Recipes Using Our Clean Palate Collection

Healthy meals don't need to be boring! Over the past few years, in the midst of a health journey, I have completely changed my relationship with food and the meaning of eating well. My diet consists of mostly organic, low-processed, high protein meals that have a comfort food twist.  I have always loved food and believed that in order to achieve my health and weight goals, I would have to eat bland "healthy food". That has not been my experience.  I have developed a deep love of cooking whole food from scratch and sharing it with others, and these recipes are a few favorites that I want to share with you.

NOTE: This is not medical or dietary advice.  I am simply sharing some of the meals that my family loves to eat while trying to maintain a healthy and balanced lifestyle. BOURBON CHICKEN AND VEGETABLES

INGREDIENTS:

-2 Boneless Chicken Breasts, cubed

-Broccoli, chopped

-2 Carrots, sliced

-1 Red/Yellow Bell Pepper, sliced & seeds removed

-3 TBSP Olive or Avocado Oil

-1/2 Cup Finch & Fennel Sweet Bourbon Sauce

-2 TBSP Coconut Aminos or Low Sodium Soy Sauce

-1 TSP garlic powder

-(optional) White Sesame Seeds

Directions: chop veggies and chicken. Add veggies to a saucepan with a few tablespoons of water and 1 tablespoon of oil, cover and place on medium heat.  Steam until soft and set aside. Simultaneously heat 2 tablespoons of oil in a medium fry pan on medium heat and add chicken.  Sautee until 90% cooked. Mix in veggies and Coat with garlic powder, aminos/soy sauce, and Sweet Bourbon Sauce.  Cook the remaining 10% in the saucepan OR spread out on a baking sheet and broil on high for about five -seven minutes, tossing for even caramelizing. Sprinkle with sesame seeds and serve over Jasmine or Brown Rice.

STUFFED ITALIAN CHICKEN, GREEN BEANS & SOURDOUGH GARLIC TOAST

SOURDOUGH TOAST:

Sourdough Bread - sliced

Grass fed butter or olive oil

Finch & Fennel Italian Stallion Seasoning

Garlic Powder

Directions: Slice bread and spread each piece with olive oil or butter. Sprinkle with Italian Stallion Seasoning and Garlic Powder. Bake at 375 for approximately 7-8 minutes, or until desired toastiness achieved.

STUFFED ITALIAN CHICKEN

-2 Boneless Skinless Chicken Breasts, filleted in half

-1 Ball of Fresh Mozzarella 

-Large Sliced Uncured Pepperoni (Wegmans brand recommended)

-Large Sliced Uncured Hard Salami

-Finch & Fennel Italian Stallion Seasoning

-Olive or Avocado Oil

-Balsamic Glaze (optional)

Directions: Coat baking dish with oil. Add filleted chicken breasts, spread evenly and bake at 375 for 12 minutes. Remove from oven. On half the chicken breasts, layer pepperoni, mozzarella and salami.  Place the other half of the chicken breasts on top (like a sandwich) and brush the top with oil, sprinkle generously with Italian Stallion Seasoning.  Bake an additional 12 minutes. (Optional) Drizzle with Balsamic Glaze when serving.

SAUTÉED ITALIAN GREEN BEANS

Ingredients:

-Steam in bag Organic French Green Beans (note: if you want to reduce plastic exposure, you can start the recipe by steaming in a saucepan with water)

-Garlic Powder

-2 TBSP Olive Oil

-Grated Parmesan Cheese 

-Finch & Fennel Italian Stallion Seasoning (Optional)

-Salt & Black Pepper

Directions: After steaming the beans, sauté them in a saucepan with olive oil, garlic powder, salt and pepper. In the final minute, sprinkle parmesan cheese and Italian Stallion Seasoning to taste. Toss quickly, but don't let it burn off. 

BERRY BLAST CHICKEN SALAD w/ MAPLE MUSTARD DRESSING

DRESSING:

-2 Tbsp Olive or Avocado Oil

-1 Tbsp Red Wine Vinegar

-1 Tbsp Real Maple Syrup

-1-2 Tbsp Finch & Fennel FIg Mustard OR Champagne Honey Mustard

Combine and mix well. This dressing works well on so many salads, but we love it paired with sweet berries and tangy feta cheese.

SALAD:

-Raw Spinach Or Mixed Greens

-Grilled Chicken

-Blueberries

-Sliced Strawberries

-Crumbled Feta Cheese

-Red Onion (optional)

-Pecans or sliced almonds (optional)

Combine in salad bowl and drizzle with dressing. Enjoy!

COMFORT FOOD BONUS:

Smoked Whiskey Meatloaf & Truffle Parmesan Roasted Potatoes

TRUFFLE PARMESAN ROASTED POTATOES:

-5-6 Yukon Gold OR Bag of Mini Potatoes

-Olive Oil

-Salt & Pepper

-3 TBSP Finch & Fennel Truffle Parmesan & Black Garlic Seasoning

Directions:

Slice potatoes and place in a mixing bowl. Coat with oil, seasoning and salt/pepper.  Toss to coat evenly.  Lay out on a baking sheet and roast at 400 for 15 minutes. Flip them over on the baking sheet and cook an additional 5-10 minutes or until desired softness/toastiness is achieved.
