Savor The Season: New Summer Recipes
There’s something special about cooking in the summertime. Fresh produce, grilled meats and lighter fare make summer gatherings a little bit sweeter.
This collection of recipes was inspired by our newest Finch & Fennel food collection that is a line of small batch artisanal food packed with flavors, not chemicals.
Note: As an Italian that loves to cook, I usually "measure with my heart." I have put together estimated quantities to comprise these recipes, but feel free to adjust the amounts to suit your tastes.
ARUGULA SALAD W/ SOURDOUGH CROUTONS, SHAVED PARMESAN & LEMON BALSAMIC DRIZZLE
Ingredients:
Washed Arugula
Shaved Parmesan
Sourdough Bread, cubed
F+F That's Amore Seasoning
Avocado or Olive Oil
F+F Meyer Lemon Aged White Baslamic
Directions: Preheat oven to 400 degrees. In a bowl, add cubed sourdough and coat evenly with oil. Sprinkle That's Amore Seasoning and toss. Spread out on baking sheet and bake for 5-8 minutes. Plate your arugula and top with shaved parmesan. Add croutons and drizzle with a generous amount of the Meyer Lemon Balsamic Glaze. (optional: grind fresh black pepper).
SUMMER CHICKEN RECIPES:

HOT HONEY & FETA GRILLED CHICKEN:
Ingredients:
Boneless, skinless chicken breasts
Avocado or olive oil
F+F Kick In The Pants Seasoning
Crumbled Feta Cheese
F+F Hot Honey Drizzle
Directions:
Pre-heat oven to 400. Slice chicken breasts in half evenly and lay them in a baking dish. Coat generously with oil and Kick in the Pants Seasoning. Spread out the seasoning into the chicken so it melts in (no powder residue that could burn). Bake for approximately 20 minutes (or until cooked through). Remove from the oven and top with feta. Switch the oven to broil and cook for an additional five-seven minutes - watching to make sure it doesn't burn. Remove from the oven and drizzle generously with F+F Hot Honey.

TOMATO BACON JAM CHICKEN SALAD
Ingredients:
-Cooked chicken, cubed or shredded
-Mayonnaise (I used Primal Kitchen Avocado Mayo to avoid seed oils- available at Wegmans)
-F+F Tomato, Bacon & Jalapeño Jam
-Lettuce, wrap or bread to serve
Directions:
Simply combine chicken, mayo and jam in a bowl until evenly distributed.
Note: For Three chicken breasts, I used 3 tbsp mayo, 2 tbsp of jam. This "Jam" is the consistency of salsa and is not syrupy sweet, so its a perfect sweet, smoky & spicy addition to your chicken salad.
Serve on a bed of lettuce, wrap or crusty bread and enjoy!

SUMMER CHICKEN MEATBALLS & VEGGIE RICE PILAF
MEATBALLS
Ingredients:
1 lb ground chicken
1 cup seasoned Italian breadcrumbs (I like 4c because it is made with Romano cheese)
1 tbsp grated parmesan cheese
1 egg
fresh parsley, chopped
1 tbsp F+F That's Amore Seasoning
1 teaspoon of warm water
Avocado Oil
1 tbsp grass fed butter
SAUCE:
Ingredients:
-1-1.5 Tbsp Chicken stock concentrate (I used Wegmans Chicken Bone Broth Concentrate because that's what I had on hand. You can use bouillon as well)
-2/3 cup white cooking wine
-Grated parmesan
Directions: Coat a frying pan in oil and add pat of butter and place on low-medium heat. In a bowl combine all the other ingredients and roll into 1-2" meatballs. Add them to the fry pan and cook approximately 8 minutes on each side. The meatballs should be 90% cooked before proceeding to the next step.
Add chicken stock concentrate, 1 cup warm water, and wine to pan with meatballs. Cover and cook an additional 7-10 minutes.
I served this over a summer rice and veggie pilaf. I cooked jasmine rice in salted water and once cooked, I added chicken broth concentrate, butter, peas, caramelized onions and roasted carrots.
Plate the meatballs with the rice and top with pan sauce.
THE BEST PASTA SALAD OF THE SUMMER!
I have been making this for years it is always requested for parties and bbqs. It is a sweet and savory explosion of flavors, perfect for Summer!

TUSCAN PASTA SALAD
Ingredients:
1 lb Bowtie Pasta- cooked and chilled
2-3 Tbsp Sun-dried Tomatoes
2/3 cup Fresh or Frozen Peas
3-4 Pieces of Bacon, Cooked
3/4 Cup Mayo (I use Primal Kitchen Avocado Mayo)
1/4 cup basil pesto
F+F Fig Barrel Aged Balsamic Drizzle
Combine pasta, tomatoes, bacon, peas, mayo and pesto in a large bowl until combined and coated evenly. Drizzle with balsamic glaze before serving.

BLUEBERRY LEMON YOGURT BOWL
This one was created and inspired by my mom who says this has become her favorite treat when she wants something sweet without the guilt! This can be a great breakfast, snack or after-dinner indulgence.
Ingredients:
-Vanilla Greek Yogurt
-F+F Lemon Curd
-Fresh Blueberries
*Add a little extra crunch by adding Chia Seeds or shredded coconut.
